The organic farms at both lodges are steadily growing and expanding. This October, Soorya and the team at Karnali introduced poly culture crops. Marigold flower has been integrated into the gardens to help attract pollinators and beneficial predators to manage the pests. The nursery beds are nearly ready for transplanting and the field of potatoes will be green in a week or two.
But what does this mean to guests at the lodges? It means sumptuous modern cuisine, balanced with the freshest vegetables and spices. The sample menu at Karnali Lodge is soon to be introduced at Tharu. The head chef Minu is preparing to teach the chefs at Tharu this November.
